Little batch of Kabosa

It's  Been a while, time to get back at it.... funny how work seems to get in the way most of the time.
was  a busy week,  did three racks of ribs, 10 pounds of jerky and two 9 pound buts . Sorry no pic's for that
anyway did snap a few of the kobosa  I'm doing today.

10 pounds stuffed into hog casing.  Each ring is roughly a pound






Into the smoker for some dry time




going to give these 3 hours of hickory



Just a little difference between the pid temp and bradley temp




Will be back in a few hours  with the finished pic's Thanks for looking

I Just had to start the day with tim's

Working on or prepping a pork belly for a cure in the fridge and 10 pounds of beef sticks for tomorrow.

What is that Auber thing beside the smoke generator? Why and what does it do? Do bradley sell this as a separate unit?

You bought a great smoker.  The auber isn't something you "need".  As you smoke more and more you may end up wanting it, especially for sausage.  My dad still uses his 6 rack dbs without one for everything including sausage.

OK just been reading through the forum and noticed all the mod posts and started wondering why with such a great product people are modding their smokers out of the box? Just asking here. Maybe its not so great after all, just wondering

I'm sure that the vast majority of Bradley owners never perform a modification of any kind and crank out delicious smoked food with no problem. Keep in mind that most people who frequent forums are more "into" whatever it is they are "forum-ing" (is that a word?) than the average person using the product and therefor much more likely to not only perform mods but also post about them . Make sense ?

kobasa reached 158 It, pulled from smoker and into cold water for cool down

Only mods to my smoker are a fan install, still running the same element that came with it...  but I do like the dual pid for sausage.... :)
