I've heard other smokers with other brands using tin pans with a rack inside to allow the smoke to fully circulate around the meat and no mess. 1 person I met put on a short class and actually he and his wife enter local competitions, sometimes state wide.
I am really looking at using the tin pans in some cases to help eliminate the drippings mess as the drip pan doesn't catch it all.
I've noticed that eventually the old dripping stuff will eat away at plastic such as the temp. control below the door. it now dangles.

Okay... I finally found some good posts on using aluminum pans and yes I gonna start using them. I have some vegis, a whole chicken and some wild duck breasts that I will be smoking tomorrow in Maple after brining overnight.
I do try to clean-up afterwards but the extra drippings that the Bradley pan does not catch will cause damage to plastic.

I use aluminum pans with small holes on the bottom to smoke salt.

Thanks for the input! I bought some aluminum pans and found a rack at home that fits inside so that the meat will be raised about 3/4 inch.
By the way, I tried changing my 'newbe' status but can't seem to figure it out. Any idea's??

Thanks,

I see you have the digital model. Haven't heard a lot of good about going digital. What are your thoughts and opinions and experiance?

Gafala

I have had my 4 rack digital for over a year going on two, I have the 900w mod and a PID, no problems that I can't handle I made some bars that allow me to use 8 racks with smaller meats nuts veg's and a three bar setup for hanging sausages.

So what is the PID?

Auber Plug & Play PIDs

or...

PID Controller

Basically, they provide a tighter temp control for the Bradley.  You do not need something that precise for smoking most things.  I have one because I like accuracy and I love to tinker with gadgets.

The newbe status is not a ranking of ability but rather a measurement of  how many posts you have.
Life is short. Smile while you still have teeth.
