Smoked Salmon Omelet, aka "Fish Eggs"

Quick n' easy recipe for a GREAT omelete.....

Next time you're making your favorite omelete, crumble up smoked salmon, (I use my fingers instead of a blender/processor), about 1 tblsp per egg, and mix with egg(s). Then continue making your omelete the way you normally do. We call it "Fish Eggs" here and it adds a great smoky flavor with surprisingly no "fishy" taste. It might be a good way to break your "I don't eat salmon!" friends into eating salmon!!  ;) :)

That sounds good. I'm going to have to pick up some salmon now. I do something similiar with tuna fish. After pouring the egg mixture in the pan, try adding some fresh diced tomatoes and minced onions and garlic powder on top of the omelet. Cook like any stuffed omelet, fold and serve.

Tip: remove the pulp from the tomatoes before dicing.

That sounds real good. I had something similar at the Edgewater in Seattle for breakfast the other day. They mixed smoked salmon, sliced green onions and some cream cheese in with the scrambled eggs. Dang tasty vittles.

Gotta try that "Fish Egg" recipe.  I have a non-salmon eating fiance that I have to convert since I have tons of smoke salmon in the freezer.

I mix cold smoked salmon in the eggs when I make an asparagus omelet.  A dollop of sour cream on top or a little whipped cream with a dash of horseradish finishes it off nicely.

I made a variation of Kummok's fish eggs. I used some of the Copper River Reds I smoked and topped it with some WASS, per Kummok's recommendation. I have to say a fish egg omelet is great by itself but topped with WASS brings it to a whole new dimension. Kummok my thanks go out to you again, your recipe is great and WASS is fantastic.

OMG...and to think I've been doing briskets and the like, I so love a good omelet and that one looks amazing!  Does anyone else put hot sauce on their omelets?

I got an e-mail from someone on the forum that did a brisket omelet with Sop'n Sauce. I have not even tried that one yet but they said it was great. I love hot sauces on omelets though.

I thought hot sauce was the main ingredient for omletes or any style of egg for that matter. ;D
