Topless Overnight Refrigeration Treatment?

Does anybody have any experience with leaving things overnight, uncovered, in the refrigerator to create a "skin" that has a name I'm forgetting right now?  Particularly for butt? 

Can this be done simultaneously while the rub is being "applied" during those overnight hours or should it be rubbed, left overnight covered in the fridge, rinsed, towel dried, air-dried overnight (in fridge), re-rubbed and then smoked?

I've heard that fans and hair dryers are good fast alternatives, but fail to yield the same "skin" effect.  Anyone?  I'm looking for some love.

You have a way of wording questions. 

You may be mixing up curing process posted from salmon, and dry aging beef with pork butts.

I refer to any of ICERAT4 posts on slathering on butt rubs. Several other real good posts as well. In anycase, mine spend the night in the fridge with see through plastic wrapped tightly.

Was wondering how topless in a fridge was going to fit in.  The "skin" I think you are referring to is called a pellicle and is more commenly referenced when brining and drying after a brine as in fish.  Usually meats are rubbed and store covered in the fridge overnight.  This allows the flavor to penetrate but you want to keep out any bacteria that may cause you to worship the porcelin gods later on.  When to wrap tightly in plastic or losely in foil is still a mystery to me.

For me, I have usually used dry rubs with tight wrap plastic and wet marinades in plastic, stainless steel, or glass containers with covers.  Brines and cures get washed off, rubs do not.

Just curious as to whether anybody had any experience with hot smoking meats combined with this process of cold overnight air-drying.

I've never tried this method before, and I always protect my marinated/rubbed/brined/other meat with plastic.

I would always put the meat in some plastic wrap / bag, vacuum seal it or put it in a sealable box to protect it from being contaminated and stop the possibility of it cross contaminating other foods when putting it in the fridge.

If I need to put anything in the fridge uncovered (eg. trays of salmon for pellicle formation) I use my beer/wine fridge..... of course that means drinking the contents first but that is hardly a chore! ;D ;D ;D

That means there is no other food to contaminate it then I just give the fridge a wipe out afterwards.

I had way to much rum one night and crawled in the fridge to see if the light did go out. Well shoot I passed out and fell out on the floor with a head of lettuce in one hand. The boss lady didn't say much about it. She just stepped over me and mumbled something about some idiot that forgot the salad dressing. ::) :D I guess I'll never know.  ??? ;D
