I was wondering if anyone out there smokes their ribs without using a rub first? I was thinking of trying some this way.

I thought I would smoke the ribs with my wood of choice then remove, coat with BBQ sauce and a quick finish on the grill for a bit of char.  I would think that the meat, smoke and BBQ sauce flavors would be plenty without the rub.

Anybody tried this?  Good or bad experience?

I can't help much because I haven't tried it before but I did read someone elses post that does use just salt & pepper. I just can't remember what post it was on. They said it was good though.

Now that I have possession of Iceman's sauce, I do not add anything else.  Prior to that, I only used salt and pepper if the BBQ Sauce did not have enough in it.  I prefer to smoke, sauce, then either a quick broil in the oven or a quick grill - just enough to dry the sauce a tad.  I grill as the final step when weather permits simply to add a little charcoal flavor.

I agree with Man of Wild Fe-lions...I get the flavor I personally like this way...ribs and chicken I know finish them all on the grill accordingly

It's not how much you smoke but how many friends you make while doing it...

No Rub, Not a problem when you are going to add your sauce and grill anyway.

Smoke flavor may be more tasty anyway. Reference to Iceman sauce is key to great ribs anyway.

Heck, sometimes when I simply want pure meat, I just salt and pepper ribs to taste and smoke with a charcoal grill finish.  No sauce or other spices needed.  It is hard to resist Iceman's Sauce once you have had some IMHO.
