Spring Storm Pulled Pork W/Pics

Wanted to smoke a pork butt today and we got hit with a miserable spring snow storm. We have about 8" of snow on the ground and 30-40MPH winds. Luckily the Bradley is in a covered patio and I got the butt smoked.

4 pound butt rubbed with a cuban rub and used a bourbon mop while cooking. Smoked for 8 hours with 2 hours apple smoke. Took to IT of 190. Wanted to go to 200 IT but family was getting hungry and grumpy. Only set for about 20 min. before pulling as there was no holding the family away any longer.

Done with the smoke and first mopping.


Almost done.


Almost gone. The family loved it.


Not much left.


Pork was nice and moist and tasted great. Put the beans in towards the end of the smoke and had some slaw with it.

Rub
INGREDIENTS:

    * 2 tablespoons brown sugar
    * 2 teaspoons white pepper
    * 2 teaspoons dry mustard
    * 1 teaspoon garlic powder
    * 1 teaspoon onion powder
    * 1 teaspoon paprika

Bourbon Mop:
INGREDIENTS:

    * 1 cup kentucky bourbon
    * 1/2 cup brown sugar
    * 1/2 cup pureed sweet onion
    * 1/4 cup dark corn syrup
    * 1/4 cup ketchup
    * 2 tablespoons Dijon mustard

Congradulations on the success.  Looks like you need to do a few more smokes to get that BS seasoned a little more.  ;)

Working on it as I have been smoking each week. It is a little cleaner than it was as I spilled some baked beans down the back and wiped it off. Love the DBS and plan on many more smokes.
