I am just ordering my bradley 4 rack, so I'm not really a newbie yet. I usually bbq for my Saturday guys at a car dealer a couple times
a month. What's a good minimal prep feed I can do without an oven to finish. I do have a grill. So many rubs and brines, this really
sounds like fun!

If you are willing to smoke overnight, then pulled pork would work fine.  After the cooking process you can FTC for a few hours and still be able to serve it hot.  I have FTC'd for almost 4 hours and the meat was still too hot to pull by hand.

I know you said you didn't want a lot of prep and these do take some prep time but you can do it the night before.  I did some last weekend they are great and the prep is not too bad.  The nice thing with this recipe is that they only take 2.5-3 hrs to smoke/cook so you could put them on at 9 am and they'll be ready by noon.
