Copper River Red Salmon Smoke

I got a hold of 1.4lbs of Copper River Reds and smoked using Kummok's recipe. Tomorrow I'll use some of it in a fish egg omelet with some W.A.S.S sprinkled on top.

That's a long swim to TX for those little buggers, Domenick but it looks like you treated them right when they got there!!

Note to WTS.....can't rightly tell you the street address, but I'd guess that he's certainly in the State of Nirvana right about now! 8)

What are the sheets you placed on your racks called? and where did you buy them?
does it keep the fish from sticking to the racks?
