Anyone ever try adding sugar to the brine for almonds ?

FLBR,

What do you use for a brine recipe for your almonds??  I am going to smoke some almonds today from your other recent posting for spicy almonds, but I am also interested in your process for brining/smoking.  I have about 12 lbs. of almonds waiting for me to figure out what to do..

I just dissolve as much salt as I can in as much water as I need to cover the amount I am brining.
I usually heat the water almost to boiling, stir in the salt, and let it cool before putting the nuts in.

I brine the nuts for 24 hours, then drain and spread on a sheet pan(s) to dry. I setup a fan to blow across them to speed up the drying process.
