This is my 3rd batch of ribs. I am cooking them on Monday and need to serve them Wednesday. Is it ok to put them in the frig after I FTC them? What is the best way to reheat them on Wednesday? 1 hour in the oven at 325? Thanks for the help. This forum has been invaluable.

I have had pretty good luck with 4 hours of smoke, cool down and wrapping in foil and finishing on the BBQ the next day. Don't really know if this is a health risk or anything, Habs will be here shortly for a more educated response.

That sounds like a good plan. Either the oven or the grill. Maybe 300 instead of 325

nhaydon,

Both methods work well. I like to put my ribs in a deep aluminum pan and add some apple juice to the bottom. Then I cover with foil and bake at 300-325 until hot.

Good luck with your draft. I just finished up my last draft this past Saturday.

One method:

Yes, put them in the fridge after FTC and they cool down.  To reheat, slather them with BBQ sauce (if you want) and toss them on the grill for several minutes on each side.  I start with bone side down and apply heat to that side the longest.

You can also reheat in the foil right out of the fridge and then finish on the grill for those that you want to sauce and glaze over.
