packer vrs centercut

I hear you guys talking about packercut brisket and around here they sell what they call centercut. Is it the same. It looks to me like the center cut is pretty well trimmed with a decent fat cap left on it. These briskets run 6 - 9 lbs.

Bflo if I were guessing that would just be the flat cut away from the point!  If thats all you can get, go for it you'll still have some tasty vittles!

I have done the centercut (flat) once and it came out great. Is the packer cut a whole brisket just sealed in special packaging? I can get one of those at BJs and I will. I have seen regular flats and they seem to be just a bit over half the size of what I am talking about. Maybe I will pick up what they call centercut around here and post some photos.

Quick ? how much should a packer run per lb

I've seen what they call center cuts, and if we are talking about the same it is about half the size of a regular flat. It may be part of the flat but it is not a whole flat.

When you go to BJ's or Sam's the flats are also cyrovac, so read the label. If it is only the flat it will be printed on the label.

Packer trimmed here run 1.99 lb, when they run them on sale .87 to .99 lb.  Market trimmed run 2.49-2.79 lb.

My butcher charges $2.99 for the whole packer - USDA Prime Angus.

Sams is $1.99 for select grade flats - I've not been happy with those.

In my area Sam's always carries Angus brisket flats, but also in my area Angus is not graded; it just labeled Certified Angus; it doesn't matter what grocery or butcher shop you buy from. I purchase some on 09/02, at $3.26/lb.; that is up $.35/lb since June. As for the price, you have to remember I live in New York, so that is a pretty good price.

I actually just found a packercut thursday for $1.99 per lb I was thrilled. It is now aging for a while before I prepare it.
