As i was dry rubbing another pork loin, I realized that probably 80% of my smoking has been pork loins.

what's your standby?

Depends on the time of year
Fall - Bambi/venison
Winter - Cheese, Sausage,
Spring/Summer - Anything I can get my hands on.

And as FLB said I like pork butts and I can not Lie

Habanero Smoker

Most would be poultry.
Then butts.
Then brisket
Followed by sausages.
Canadian Bacon
Pastrami
Belly Bacon
Top Loin (when I can afford it)
Hams
Mussels (when I can find decent ones. Thanks Manxman for that recipe)
And anything else I feel in the mood for.

Glad you are still using it Habs.

Recently cheese and back bacon have been the order of the day followed by fish.

On two consecutive days recently a friend who fishes for shellfish commercially has phoned from the fishing grounds to say he has a bag of king scallops for bartering........ thats some 250 - 300 large scallops per bag!  ;) :D

Guess some cold smoked scallops will be my priority over the next few days!
