Chicken tonight-I just love this smoker.

Brisket Lover

After reading all the great wing recipes I decided I was going to do my own today.  Went to Wally World to do the grocery shopping and as Im browsing the meat section I come across packer briskets and I do a back flip.  Its like my prayers have been answered.  No more $4/lb, it was $1.86/lb. Its an Excel but doesn't have the grade on it so I don't know what it is.  It feels good, fat is white, so hopefully it is good.  Also got some dino bones, but no wings..  They had 10 lbs of back attached drums for $5.  Couldn't pass that up.

So I soaked it in some kosher salt for about an hour, then rinsed and injected it with Italian dressing, added a little Emeril's Chicken rub and into the smoker for 40 mins with hickory.  Finished up in the oven and then chowed with some macaroni salad and Amish potato salad.  It was awesome.   I love how easy it is to add some smoke to a meal and make a taste explosion.

Cant wait to do the dino bones and brisket #2.

This time I actually forgot to snap some.  I usually am pretty good about remembering.

Grading meat is optional, and something meat packers have to pay extra for. If it certified Angus beef, that that is consider at least choice, some say it's better then choice. Let us know how the brisket turns out.

Meat surfing paying off.  Gotta love those briskets.  Just finished the last bites of my last wallyworld brisket.  Planning the next one.

I had a wally world brisket flat yesterday and is was very good. I like the fact that you can buy flats with out the whole brisket. Only place I have found that so far. My flat was $13.50 and it weighed 3.50 pounds.
