I like this one and provide it for your pleasure to modify as you wish. The side of salmon in the pix is about 15-17 inches long.:

CB'S EZ SMOKED SALMON

This is a pretty easy to do, regardless of the proficiency or experience of the cook.  The final product is perfect for a dinner protein as the method provides you with a softer but smokey flesh - but not squishy like a lox - rather than the hard flesh that some processes result in.  I like the hard as a snack, the soft lox for omelets and on bagels - and this smoke for a meal.
Happy Grilling!

CB, you should be the next one to do a contest here! CB is a published BBQ guy with a new book!

How about you start a little draw for a personal signed copy? Sort of meld the two forums a bit.

My bad if it is a rotten idea!  ;D

I think that Bradley and Char-Broil have made friends do to the Big-Easy. But really we are just BBQ and smoking folks that love to share ideas and recipes, some that do not involve the Bradley, like all the pizza chatter here? It's not about the equipment here, it's the enthusiasm of many folks sharing there experience. And yes we love toys, [equipment for cooking]. Have you noticed here that not to many people post their equipment as a sig in their posts like most bbq forums? And your cooking methods on non Bradley equipment are most welcome, as I hope you have seen the new topic of non-Bradley equipment.

No overstepping in my book!  ;D

I agree with Smoking Soon...after all it's his fault I have a Big Easy...after all his delectible posts I couldn't help myself!!! It is a kool piece of equipment...  :)
