Smoked Codfish Tacos with Chipotle Slaw

I like to make fish tacos using cod...it's my favorite. The chipotle slaw is something I use on pulled pork sandwiches too. It's easy to spice up as hot as you like.

For the slaw I mix
1/2 cup of mayo
1 chipotle pepper in adobo sauce (minced) you can add more
minced onion
salt to taste
a squeeze of lime juice..



I mix this with one package of shredded slaw....then chill.




I rubbed the cod with olive oil and seasoned with some homemade seasoned salt and cracked black pepper...



It smoked for about 1 hour using olive wood. I checked the fish with a fork to test it.



I heated my tortillas...



The smoked cod taco with chipotle slaw and a bit of fresh pico de gallo....

It was kind of tasty. :)

All your food sounds and looks great cowgirl!  The slaw is a great idea, we might try it with sauteed cabbage.  Those pictures make me hungry!

Although I'd love to join you with those tacos, I just had a prime NY Strip so I'd have to agree with WCK, good idea generator, the limes remind me it is time for an Italian Cadilla Margarita.   ;D
