Yes, the smoke does penetrate the casing while keeping the moisture in. These casings just peel off when ready to cook or grill or eat as is.
If any of you are familiar with Bulk wieners or hot dogs, these are the same casings.

you can even freeze your sausages in the casing and they will not freezer burn. They are better than vacuum packing.
