Draft Day Ribs

Hello all. This is my first time posting. Did my first smoke last weekend with Pulled Pork and it came out great. Gotta say reading all of your posts has helped tremendously. This is the thing, I'm hooked on this smoking thing and I want to impress my friends at this weekend's College Football Draft.

I'm gonna smoke 2 racks of spare ribs, trimmed down to STL Style and cut in half.  The draft starts at 1:00 PM.  Starting at 6:00 am, I figured I would smoke for 3 hours at 220, remove and finish in the oven at 220. How long will the ribs need in the oven? After reading I don't know if I should spritz with apple juice, wrap in foil and place on a cooking sheet or place in a foil roasting pan and cover? Or neither? How much apple juice do you put on the bottom of the roasting pan?

What are some other ways to slather the ribs before the rub? I've seen Olive Oil and Crushed Garlic. Is it recommended?

If I left the ribs in the BDS for the whole Cook would I rotate the racks?

Welcome to the forum.  As to your questions as to how to finish the ribs, you can do it either way you described.  In the past I have wrapped them in foil with a splash of apple juice.  Last batch I put in a roasting pan with about a quarter inch of apple juice and covered them with a sheet of tin foil.  Think I liked that way better.  Your temp of 220 is a good call.  As for how long, no pat answer on that.  Mine went about 4 hours in the oven after the 2hours and 40 minutes in the smoker.  The ribs will tell you when they're ready.  Watch for the meat to start pulling back from the tip of the rib.  When it has pulled back a half inch or so, take a toothpick a stick it in the meat and see if it is tender enough to your liking.

If you do them completely in the BDS, rotating the racks is a good idea.  Enjoy and let us know how they turn out!

225 for 5 hours works fine for me, the whole five hours in the smoker.

welcome to the forum and id say 2 hours of smoke and another 3 to 4 hours of cook time to the point of the meat is pulling / falling off the bone cook temp id 215 to 225 till done
