Pastrami Jerky for Future Use

And probably a short ride in the tumbler also.

May just let the jerky drain and almost pat dry, then

Take a gallon bag and shake up some dry spices on the strips.

Good plan CRG.  Will be watching this thread with interest.  I'm liking the idea of pastrami jerky.

If this Pastrami Jerky taste half as good as it smells ...

Way to go CRG!  Can't wait to see the finished product and read your technique from start to finish.  I was hoping it would turn out like I thought it had the potential to.  One quick question, what type of wood did you use for smoking the pastrami jerky?

This batch just got dehydrated.
