Saw the recent posts on pastrami and remembered that I had a corned beef brisket in the freezer. So I defrosted it, added some rub, put back in the fridge for a while.

All rubbed and being wrapped up:


Into the OBS at 225* and 3 hrs of pecan

very good and it usually gets better overnight. Tomorrow I slice it thin and vac seal.
