Smoked Hot Hungarian Paprika Sticks

I ground up 5 lbs of pork seasoned it and added some Hungarian hot paprika. I got cure 1 in it so its going in the fridge overnight. Stuffed into 17mm collagen casings.

My custom made SS stuffer tubes let me get a longer amount of casings to stuff.


Here the sticks are stuffed. Going in the stick smoker tomorow after i get back from the ceegar shop  ;D

Got the sticks hanging @170* right now.




The BPS generator is going. For some reason its not burning the pucks all the way, hope it aint going bad because it seems to cycle every 10 to 13 mins. This is with the batteries and switching to the 12v adaptor.

Hickory, new just from the box. It seems it cycles faster for some reason? Maybe a call to Brian.

Once again, a great looking smoke. 
Yep, we all want some of those extra long stuffing tubes. 
The one on my Cabelas 11 lb are not very long.  I've got an aftermarket for doing 30 and 32mm, but can't get much on those either.  Guess I need to do some looking for stainless pipe . . .
