I just trimmed up and rubbed down a 14lb brisket using WTS's tutorial on the recipe site... ;D ;D I can't wait til tomorrow and throw that bad boy in the smoker...   Sorry but I got so exicted I forgot to take pictures of it before I wrapped it up after it was trimmed/rubbed.. :(  I will post some pics of the finished product though... weighed in at 11.7lbs after trimming...

Way to go Jimmy. Trim it, rub it, and smoke it. Life will be good. Just follow the tutorial from WTS and it will work. Have fun and keep us posted!  ;D

WTS's recipe is a good one to follow be eating good at your house.
Bacon is the Crack Cocaine of the Food World.

Be careful about calling yourself and EXPERT! An ex is a has-been, and a spurt is a drip under pressure!

Is the cold beer and ABT's ready?

All rubbed down and ready for some smoke...

I decided to seperate the point, it was way too large for the racks..

After about 6 hours with 4 hours of smoke at 220°...

Boated and then into the oven for a long nap...

I can't wait until tomorrow...

Mashed taters and gravy, green bean casserole and some jalapeno corn bread.
When you take the meat out of the boat and FTC save the drippings put in the fridge till the fat becomes solid, spoon off the fat and discard. Take the drippings and make some of the best gravy you have ever had
