Excellent as always but I wonder about the line on page 10 in the Butcher Commentary that says, "The cold also helps in the formation of bacteria." Doesn't sound like something I want to do.

I read that too. I knew it was a typo. If you REALLY want bacteria to grow ... Don't chill it.

I didn't send out a February Newsletter. Was dealing with Family matters for the last 3 weeks of January and I didn't have time to put one together. If you want to make sure your on the mailing list send me an email at [email protected] and I will add you to the mailing list for the newsletter.

Think Chris has been behind the 8 ball with Family issues. (Death in the Family)

Don't know about this month, but he will be back up and running soon.

It takes time and thought to get this newsletter together.

Again ........... if anyone wants to help Chris with a product review, a special

recipe, forum member of the month, etc. , He will WELCOME the help.
