This might be a little far fetched but sounds like the Spam holds moisture well so what if you sliced the Spam BEFORE you smoked it? Sliced, rubbed and into the smoker. I'm crazy enough to give it a shot and CRG, I d@mn sure know you are too! ;)

It all looks great. Pastrami, is there anything better?

Slice it and a "light" rub may be just the ticket.

Might even be good with Jan's and CT.

I am thinking that you do one of the methods to get more smoke in it then reheating, fry it.

I brought in a tiny baby girl kitten.. amongst my old killer panther boy cats...
They showered her with devilish evil hissing I didn't even think they could muster...
