Made this bad boy a couple weeks ago when Taby was home from big girls school. Half deer loin and half pork tender loin all slathered up with some good stuff that Arnie gave me the recipe for.

Then made a bacon weave and Taby slathered that too.

Then rolled up the loins and through in a 250 F smoker and rolled 4 hr Hickory.

Right at the 4 hr mark the loins hit an It of 145 F so I pulled the beautiful hunk of joy.

Let rest uncovered for bout 20 min and sliced.

Dinner time, no we dont get tired of taters n gravy with some green bean casteroil. Its gooooood.

Taby had some friends over and that Derk Fattie only lasted bout an hr.

Looks great and she did a great job with the bacon weave.  :)

Great job Taby way to show the old man how to make some good grub!!
Bacon is the Crack Cocaine of the Food World.

Be careful about calling yourself and EXPERT! An ex is a has-been, and a spurt is a drip under pressure!

Looks like the ultimate fattie to me.  Loving it.

I am a little concerned about you eating green beans in caster oil though. :D  Sorry, just couldn't let that one pass.

They are like frog mats and you can get them from:

www.alliedkenco.com

I think they call them jerky screens.

They also have a high heat limit of like 350*
