Rescue Mission Part 2 ................ Choice Briskets in the Bradley

Had picked up these three Briskets to bring to Curt (OU812) when the Iowa

Smoke-Out was gonna happen, but Sis said she wanted Brisket as part payment

for the Sausage room. So ............ Sorry Curt. ;D



12.99 lbs, 13.61 lbs and 13.81 lbs.

The 13.81 was too long for the Bradley rack.



Was gonna cook this one fat side down so I slice it almost all the way

thru so that after I fold it, it would fit in the rack.



Pinned it on top with tooth picks. It got seasoned with Jan's and Zach's.



Next one up was the 13.61lb'er. Trimmed off a little of the end and got a good fit.

The trimmed peice will be used for sausage making. Seasoned with a light dust of Salt Lick and Zach's.





Last was the 12.99 lb'er. Just a slight bow and it fit nice. Since these were suppose to be for Curt ..

I seasoned it the way He likes them. Granualted garlic and onion powder,

sea salt, and restaurant ground black pepper.



They are getting 7 hours of combo Pecan and Crown Royal smoke.

Dang Sonny, now that's a load of meat.

Sausage room is worth this and more......

Rotated the top and bottom racks at the 4 hour mark.

Starten to get some color.





Sure smells GOOD!

First one (12.99) came off at 9:30 and into FTC.





Second one (13.61) came off at 10:30

After seeing that I do not want to hear anyone say the Bradley racks cannot handle much weight :o

That is a huge load of meat and looks great CRG ;D

The last and the biggest came off at 12:00 (noon).



Since it was lunch time and I was Hungry, I sliced off a cple pieces off

the pinned up end.



Whole Wheat Bread, mustard, onion slice, pickles. No Sauce.

I did sprinkle some Starnes on my potato chips. Glass of sweet tea.
