After 2 hours of apple smoke. Why apple? Just cause I guess.
I always go with the Kummok's recipe with a few changes I have learned over time.  ;)



After 8 hours of stepping up my pid temps to 165 degrees. The thinner pieces got a glaze of corn syrup to sweeten them up like Indian Candy.



Can't believe it but there where no boogers this time around. I made sure I had a really good pellicle formed before smoking them, that is the trick to no boogers I believe. All resting in the fridge over night before getting vac sealed.

Devo, how long did you let them dry to get the pellicle?
