I smoked this with 3 hours of Pecan. It had a smoky flavor, but I think I would like more.
Oldest Son is here this morning and I think he would have ate a whole lb if I would have let Him.

Lookin gooood, you might need to flip them over top to bottom, front to back and left to right.
I have found that helps to keep the bottoms form gettin over cooked when cookin with them 20" caseings.

The Bologna had a great taste, just a tad of Heat.
The Summer Sausage could use some heat.
I got three days of my Life invested in these Sausages ......

First good looking sausage. For a first timer you did great. Now you understand One of the reasons that I started making my SS in Hog casings. They just don't take so long to finish.
I settled the give away rules a long time ago. If she wants to give sausage away she can get in there and help with the process. I would be supprised if I ate a 1/4 of the sausage that I make. Much of it is given to friends for birthdays and Christmas gifts. I also try to give it to young hunters to encourage them to make their own sausage. A sure group on my list are the ranchers that let me hunt on their properties. They get a generous portion. This is just good manners to show your appreciation.
I hate to mention this but you might tell your wife to try putting some of your SS cut up in a cold pasta salad. It gives it a great kick.
