Rubbed and ready!



Into  the Bradley for a 4 hour smoke...........



Into the oven at 225 for 16 hours and an IT of 200 deg F..........



Maverick set and on duty..........



After 4 hours in FTC...........



Commence shredding..........




Let's eat!

They look great!  I have my first butts in smoker now. 2 x 10 lbs each. I'm torn weather to finish in oven or Bradley though. I need to go to bed but not sure about leaving them in it outside all night. Thoughts?

If you have a temp monitor such as the Maverick ET-732 to alert you in case of a grease fire or when the meat reaches the desired internal temp then I would  not worry.  Otherwise, I'd have someone stand guard.

May have to pick up one for next time. I decided to finish cooking in oven. Already smoked for 5 hours so will head to bed and let the oven do its job. Thanks for the info :))
