Canadian Bacon

I have been pretty busy lately but I ran out of canadian bacon and it is soo good I just had to make some more. I put this in to cure 10 days ago and smoked it at 180° for about 6 hours with approximately 2 hours of hickory and apple smoke.
I used Eldons bacon rub and added some garlic powder and onion powder.
I rolled them in frogmats with high temp rubber bands.



I put them away in the fridge and will slice them up later in the week.

Thank you guys! Waltz, the frog mat idea just came to me, I like how it kept them even instead of just useing string or rubber bands.
